Pumpkin Chocolate Chip Muffins

I've seen lots of recipes on Pinterest lately for pumpkin cookies using a box of cake mix and a can of pumpkin. That's it! It seemed to easy not to try. Shelby and I walked down the street to our neighborhood grocery store today to pick up the ingredients. 

The recipe I saw used a spice cake mix but this store didn't have it. Instead I opted for yellow cake thinking I could just add some cinnamon. You could also add pumpkin pie spice but we didn't have any of that at home and the store didn't either (it's a small store).

  
Simply pour the cake mix into a bowl, add the can of pumpkin, and combine. 

Like I said earlier since I couldn't find the spice cake mix I added some cinnamon. No exact science to this- I just threw some in there and stirred, tasted the batter to see if i liked it, then added a little more until I did. 

Shelby requested the chocolate chips so I stirred in about a cup. 

I decided to make muffins instead of cookies. Yes, I realize that this is basically a cupcake without icing. And I also realize this is the exact same recipe for the cookies just in a different form. But if I call it a muffin I can eat it for breakfast : )

Pop them in the oven at 350 degrees for about 20 minutes. They turned out great! These were seriously so easy and took about 30 minutes start to finish. 

We're in for a big cool down tomorrow here in the city and I'm excited we have a yummy treat to enjoy while snuggled under our blankets on the sofa. Hope everyone has a great weekend!
